Creamy Red Curry Ramen with Pot Stickers

Ingredients
4-6 garlic cloves minced
1.5 tbs finely chopped ginger or paste
1 tbs chili oil
4 tbs red curry paste
15 oz coconut milk
4 cups chicken stock
1 tbs fish sauce (optional)
1-2 tbs Screamin Sesame chili crisp
1 tbs sugar
4 packs ramen
20 pot stickers or dumplings
Green onions for garnish
Instructions
- To start you will need a large sauce pan and a stock pot to boil the noodles in. For this recipe you can either boil the pot stickers or you can pan fry them. Follow the directions for either method on the back of the package.
- Heat the sauce pan over medium/low heat. Add the chili oil, garlic and ginger. Cook until it becomes fragrant, about 1-2 minutes.
- Add in the red curry paste and cook for another 1-2 minutes.
- Add in the coconut milk and chicken stock. Mix until the ingredients are well incorporated. Then add in the fish sauce (we don't), chili crisp, and sugar. Allow to simmer for about 20 minutes.
- While the sauce is cooking, prepare your ramen and dumplings according to their packages. You won't want to use their seasoning packets. You can cook them in chicken stock to add a little more flavor to your noodles.
- Once the sauce has cooked, mix in your cooked ramen. Top with the pot stickers and green onions and drizzle with more chili crisp. Enjoy!
